A Healthy Brunch



You probably don't all know, but this week was 'Breakfast Week', organised by AHDB Cereals & Oilseeds. Their mission this year is to get people to ‘re-think’ breakfast. They have joined forces with TV presenter and model, Vogue Williams and registered dietician Nichola Whitehead.
Nichola has developed a Mission Breakfast Guide, designed to advise people with different lifestyles on the best and easiest breakfasts for them complete with full recipes and nutritional information. I loved the idea of this, so thought I'd give my best shot at a healthy breakfast/ brunch. I made this simple poached egg with flatbread, with rocket and roasted tomatoes on top.


You Will Need:

  • Flatbreads/Bread
  • 2 Eggs
  • Cherry Tomatoes or Regular Tomatoes
  • Rocket
Instructions

1. Roast the Tomatoes
Sprinkle or spray your baking tray with oil, and put the tomatoes on the tray. If you're using cherry tomatoes, simply put them on the tray. But, if you're using regular tomatoes (probably better), then cut the tomato in half and place on the tray. Put the oven on to 200 degrees, and leave for about 10 minutes.

2. Poach The Egg 
Whilst you're waiting for your tomatoes, simply bring the water to boil in your saucepan, then create a whirlpool in the pan with your wooden spoon. Turn the heat down to simmer, and slip the eggs in. After a bout 3 minutes, drain the water out, and Bob's your uncle.

3. Toast your flatbreads, or bread.
I chose flat breads because they are more filling and way more tasty (in my opinion). I don't really have to go into detail about how to toast do I?

Once everything is cooked, lay it out like the picture (all insta worthy and all that), and sprinkle some rocket on top, and there you go. How easy was that? Healthy for you, and very filling and quick!

  5. I am so jealous of you that you can poach eggs because it always goes wrong when I try! And seeing as it's the beginning of vegan month tomorrow I don't think I'm going to have the opportunity to practice!

  6. This looks so yummy!! And healthy may I add. Since trying poached egg for the first time in American a couple years back it is definitely my favourite way to have an egg. Did you know you can also poach one in the microwave? It's so quick and simple and less hassle than using/washing a saucepan. Just YouTube it if you ever fancy giving it a go :) and nope had no idea it was breakfast week.
